Short answer - not early at all!
I do offer short coverage for couples having micro weddings where they just need a few hours, but for full wedding days I never limited my coverage to a set number of hours. Many photographers will offer 'full day' as 10 hours or say they'll do 30 minutes or so after the first dance and then leave. If they do stay for the party they'll charge extra. I see my job as to tell the story of your wedding. Your wedding is not limited to 8 or 10 hours. Your wedding does not end half an hour after the first dance. The party offers the chance for great photos with a different energy than the rest of the day. Even away from the dancefloor there are great moments still happening. I firmly believe that I can only do my job properly if I'm there until the end of the night to capture it all. The final song of the night is always a great moment and a great moment like that deserves a great photo!

There's no one photo everyone should have. Every wedding is different, your photographs should reflect that and not look like everyone else's.
I don't work from a shots list so I've not been asked to get anything particular, however, the most unusual picture I've taken was of a frog hoping away with a piece of confetti!
Just carry on and embrace it! The day won't be able stop because of the weather.
I've shot weddings where there's been battering rain and gales force winds raging all day and whenever the couple has accepted it and just got on with enjoying the day with their guests they have had an amazing time, without exception. Even to the point where afterwards everyone says the rain didn't actually become a problem because they had too much fun.
