Sometimes it’s a simple as trying our food at a wedding fair and booking the date. We figure out menus later but typically, once we have confirmed our availability for their date, we talk about the style of the wedding, foods they love and any ideas they have. I then go away and put together a bespoke menu. After we agree on some ideas and themes, they book a tasting. To secure their booking they just need to pay a deposit before we finalised the menus up to 3 months out from the wedding. Once the couple have tried the food and booked we go through the finer details such as equipment hire and staffing. Seasons, Wild & Free can take care of everything from food only to coordinating the whole event.
I think to wow the judges you need to have it all! Perfect flavour combinations great textures and beautiful presentation all within a dish they haven’t seen before. I’m not sure exactly what i’d Make but probably something involving fish influenced by my time in Australia as it’s how I like to eat too.
Catering to all dietary requiremebts such as GF, DF, Vegan can be tricky. You need to be innovative to please carnivores too canapés of dates, filled with orange blossom baba ganoush and walnut topping do this well. Another favourite is truffled whipped goats curd with thyme, honey and strawberry on a fig toast.
I think most people think chocolate butvyo me anything made with love can be a food of love. Homemade chocolate dimples with rose petals, dried raspberry and gold leaf are a great edible favlour of love!
