We’d send Tracy our dessert maestro. Every pudding she makes is a work of art that tastes even better than it looks!

What is the most innovative dish you have created for a wedding?

Personally we feel that the food at a wedding needs to be made with great local produce and cooked beautifully. Classic, fresh and tasty dishes are absolutely the way a wedding should be. No one needs a pigeon breast that tastes like chocolate fondant really! The day is about you and not the weird and wonderful things the chefs are doing. I’m really starting to turn towards social dining and sharing platters at the table as a new favourite of mine to give that real happy, party atmosphere. It's also a good ice breaker for tables of people that don't yet know each other.

What is the food of love?

We really love doing modern takes on old classics. Modern chicken dishes are our favourite and our vegetable wellington is amazing if we do say so ourselves! Our dauphinous potatoes would also be very high on the list!

What is your secret ingredient?

Service. Great service staff is just as important as the food served and our team are amazing!
