Have a budget
Difficult to pick a favourite as each couple has something that is unique and special to them.
I would understand a couples/client's needs and whether they have a set idea on food choices or are looking for my guidance/suggestions. I would meet them in person, explain how we would work together and design their catering needs. I would provide my experience on timings for the day and keep in regular contact up until the special day.
