The best wedding food they have ever had

Dear Tris and Julie, Bertie and I returned from our honeymoon in Kenya yesterday (it was unforgettable) and both wanted to thank you hugely for all your efforts in making the wedding perfect! We have had a lot of people say that the food was the best wedding food they have ever had, which is completely down to you and your amazing team. The canapes were excellent

Dear Tris Just a quick email to say how pleased we were with everything last Tuesday, the canapes were excellent and your staff all very friendly and efficient. The only thing that could have been better was the weather but that is beyond our control!! We trust everything went well at the Norfolk Show, we visited on the Thursday and were surprised how dry it was underfoot, we did avoid the EDP tent though as that looked very busy, clearly you were all doing a good job! The food was delicious and amazingly presented

Hi Tris We wanted to say the biggest thank you (all the way from Tel Aviv) for your absolutely fantastic work on Saturday night. We have the most magical weekend and the food had a huge part to play in that. The food was delicious and amazingly presented throughout. This was something a large number of people commented on. We knew the food would be a big priority for us at the wedding but it far exceeding our expectation in creativity, taste and presentation. People warned me I wouldn't eat much on the day and I kept saying to people "trust me, when you know it's this good you will!" And I am so glad I did! No canapé escaped me! I also wanted to say a huge thank you to your wonderful and attentive staff and for your involvement in the smooth running of the day (including some fantastic espresso martinis!) You (or a member of staff) were there at all the crucial points when we needed you the most. For example, As we arrived at Mannington as husband and wife (slightly overwhelmed) and even when Alex and I had slight sense of humour failure after about an hour (or more) of family photos and were in need of a drink! We both wanted to say a big thank you again and will try and send some formal photos through once they arrive! Best wishes Hester and Alex

Tasting Menu

Hi I believe you were the caterers at the wedding of Anna and Mike at Spixworth Cottages last Saturday? I just wanted to send you a massive thank you. It is for health purposes that I am on a plant based diet so I was the vegan. My experience of plant based eating when eating out is that specialist veggie/vegan shops know what they are doing, the majority of places have some 'token gesture' options which are pretty bad and some places get it 'sort of' right which is pretty average. There was no 'token gesture' or 'sort of right' on Saturday for me! It was an incredible fine dining experience which had been carefully considered and constructed and which totally blew me away! I can't thank you enough. I rarely eat out and have something that I wouldn't/couldn't do better at home. It was incredible! Thanks again Sarah

What an incredible feast you created

Hello Tristram I am so sorry that I didn’t get to thank you personally on Saturday but Tristram what an incredible feast you created for the wedding. The day was so special and I have such beautiful memories of my son’s wedding which will stay in my heart forever. Every part of the day was perfect which included your amazing food. The beef was cooked to perfection

Dear Tris Thank you very much for providing such amazing catering on Saturday. Everyone we spoke to has commented on the food, a number outlining that it was the best food they have ever had at a wedding. The beef was cooked to perfection - I am not sure whether any was sent back to be cooked slightly more? You and your team all worked incredibly hard to ensure the evening ran smoothly. Diana and I had a fantastic day. You were also really kind to make Diana some extra canapés; it was very much appreciated. I suspect you may have some bookings from a number of our friends in the future. We will definitely use you again if we have another event - hopefully not a wedding though! The fact we say YES and deliver. I so seldom say no to a client's ideas, in fact I don't think i can remember the last time I did! We love a challenge and are constantly pushing the boundaries of event catering. Perfectly rare beef wellington to 185 guests in a marquee, trio of game (partridge ballotine, venison slider & pan-fried pigeon breast) to 270 at the EDP Food and Drinks Awards and medium-rare rib-eye steak & straw chips with béarnaise sauce for 220 come to mind.

A personally dedicated book for every guest, that makes sure you only invite people you like! Oh, and also a full-sized BB-8 droid cake as a surprise for the Star-Wars mad groom.

Initially talk over the phone or in person to get together the basic details for the event (itinerary, themes, plans, location, food tastes & plans). From this point I create a tailored quotation based upon these details. From this point on there is a pretty representative price and guide for the day which can be honed to suit your exact needs. We provide a menu tasting when we can discuss and adapt the menu and smooth over some further logistics. Within a year of the wedding we arrange a site visit, even if we've already done one already, to make sure we are all 100% on the same page. Me and my assistant are at the end of the phone to answer any questions you have, however trivial you think they might be, a calm couple is a happy couple! We take final numbers and dietary requirements 21 days prior to the event and then lock in all the details for your day.

Then we're there, making the magic happen at your event. Simple really :)

That is so difficult, we literally create every menu from scratch. A couple of favourites are:

Potted pork and apple crumble with mustard custard (heartwarming, yet delicate and fund)

Roasted peaches with thyme, cardamom banana cotta, cinnamon doughnuts, granola

A summer beef Wellington (served in June) with a sun-dried tomato & olive tapenade in place of the mushroom duxelle.

My head chef's favourite for the winter this year (2017) is our 'Surf & Turf' starter; Norfolk beef & monkfish medallions on toasted brioche

Smoked Dapple rarebit, scallions & whipped lobster cream

We've also done loads of 5-7 course tasting menus in the past few years, which are great fun!
