From the initial enquiry we send out our wedding brochure and get feedback from the couple on what they want, we often tweak this to the couples own tastes. When the menu is decided and details nailed down we take a 25% deposit to secure the booking and then any further edits (numbers / changes) can be made up until a month before the wedding. The balance is due a minimum of 2 weeks prior to the wedding date.
Our handmade pasta's always have the wow factor, so probably the pork belly cappaletti!
