We get to know them. Not just chat. We ask questions and understand them. We get them to take us on a food and dreams journey and share what is possible and what's not and how much things cost. We are a small team who upscale with real pros, so you get Henry and Alexander at the start, on the day and throughout.
I wouldn't, I can organise and plan, but I can't cook!! I'd ask Alexander to. He's been preferred over several Michelin * chefs in the past, I'm sure he'd have a trick or two up his sleeves.

For me it's anything with butter, but I'm not the chef! A wedding is only one day, so put all the naughtiness that you want in there and remember it forever.
Cliched, but it's a secret... In seriousness, anything from nature's incredible abundance. We have some of the best seasonal veg in the world here all year round and who can beat our meat if it's been sustainably and happily reared. If you don't eat meat, we create our vegetarian dishes as standalone incredible dishes, not just a meat dish with a vegetarian alternative.
