My most memorable wedding was when the only oven in the building I was catering at stopped working on the morning of the wedding. We brought in an external oven plus lots of induction to serve the meal the guests were expecting. They did not know about the oven until the day after :)

Find a good caterer and try to limit your options to 2 for each course as any more will slow down service
