What is your No.1 wedding planning tip for couples?
Book things early! There is nothing worse than finding your perfect supplier and then finding that they are fully booked.
What is your signature cake?
Red velvet. Decadent and fun!
What is the most original creation you have baked for a wedding?
A Lord of the Rings cake complete with a message in Elvish, which I looked up and translated myself!
Describe how you got into making wedding cakes.
Well, first and foremost, I absolutely LOVE weddings. I started out in celebration cakes, and after about a year I was asked to make my first wedding cake for a regular client. After my first one I just couldn't wait for the next. I still feel this way 5 years on!
What would be your show stopper in the Great British Bake Off?
Well, aside from a huge cake, I'd say a croquembouche! I absolutely love choux pastry and I think they look fabulous.
