What is the most original creation you have baked for a wedding?
I made a whole table of cakes that looked like a garden of beautiful blooming flowers for an opulent wedding in Normandy, France. It wasn't a traditional tiered cake but a full dessert table made of my signature design the BouCake and lots of individual mini cakes all decorated with beautiful botanical fruit petals. It looked amazing and there were so many different flavour options.
Describe how you got into making wedding cakes.
I worked in a bakery and as a pastry chef before making wedding cakes. I was drawn into the personal nature of the wedding cake making process. Making a unique design with many different techniques for a special moment in a couples wedding day is just the best thing about the job and why I love to make wedding cakes.
What would be your show stopper in the Great British Bake Off?
I'd bring my unique signature style and make a tiered cake like they have never seen... or tasted!
