My most memorable wedding would have to be my own, lol. We saved up and totally did it our own way. We hired a beautiful Surrey estate for the weekend and spent the whole time surrounded by the people we love most. It was relaxed and fun and totally full of love. I highly recommend doing your wedding your way.

My attention to detail. I'm one of those people who spends the time to make sure that nothing goes out "OK". It has to be something that I'm immensely proud to show to my clients. It's their dream, I want it to be worthy of that title.
The skills I've gained that help me balance designer looks with the best possible eating experience.
Do it your own way! You don't need the million and 1 items people say you do, just the things that are important to you.
A wedding is made up of loads of decisions, some are big, but most are pretty small. Concentrate on the things that are important to you and don't get too bogged down in the small stuff. With good suppliers in place most of these smaller things will be taken care of for you. Anything that you have to leave off the list only you'd know about, and you'll be be way to happy having fun to care on the day.
Thousands of origami cranes, handmade by the couple and their family, hanging from the roof of the venue. It was such a beautiful touch. Must have taken them weeks though!
4000 paper cranes hanging from the ceiling, all hand made by the bride and groom!
Approaches vary, some clients have strong ideas of what they want and others really haven't decided. It's my job to help them find the perfect design for thier day. We tend to talk ideas, make up a mood board, and chat about what's important to them. In this way we can create the cake design together and then I work to make it happen seamlessly for them.
Once we've established the basic requirements, I ask for a £100 booking fee, which secures the date. Then we talk more about the design, organise a consultation and any tasters, and I learn more about the wedding day plans. A further instalment is due 4 months before the wedding date to cover initial material costs, details confirmed 6 weeks before the wedding and final balance is due 4 weeks before the day. From that point on I rarely bother my clients as they have enough to think about and I already have all the details I need. I do however liaise with the venue and any other suppliers to make delivery scheduling arrangements, etc.
One feature of my cakes is that I have an extensive menu, much wider than most cake makers. These recipes have all been tried and tested and the fillings and flavours can be mixed and matched. My flavours are all naturally sourced too. There are no chemical flavourings used in Kasserina Cakes, which I think (and am reliably informed by my clients) gives a much better flavour with no synthetic aftertaste.
My favourite cake is reglularly changing, depending on what I'm working on at the time. My signature style is based around sugar flowers because I enjoy making them so much, but I am excited by ideas and am pretty adaptable.
Japanese castle.
My favourite cake is pretty much always the last one I made... but I did make an epic 8 tier cake for my stepson's wedding, which was a pile of books with the lovely Ronnie (their cat) asleep on top. It may not be my favourite style, but it was very special for different reasons.
As a child I watched (and I say helped, but she may disagree) my Mum make wedding cakes. Later she bought a shop that sold cake decorating tools and consumables so I went on a couple of decorating courses so I could advise customers on how to use the tools. The bug well and truly bit, I made my brother's wedding cake and I've been upping my game ever since.
My Mum used to make them when I was kid. Many years later, I made my Brother's and after a childcare break from my career as a TV cameraman I decided to go into cakes so I could be closer to home.
Honestly, this answer would change weekly!
I could never be on the Great British Bake Off. They don't give you enough time to do the job I'm capable of and I never do a half baked job. I'd probably make one of my cocktail inspired recipes though, so I could bribe the judges with booze ;). Pinacolada maybe? Pimms summer cup? Mojito?
