I’m Jen, the heart and hands behind Edible Essence, a cake studio rooted in the belief that beauty can be found in simplicity, that flavour tells a story, and that cakes can be both soulful and unforgettable.
Before the pandemic, I was fully immersed in the world of weddings, designing award-winning cakes that travelled across the country and Europe. But stepping away, even briefly, reminded me why I fell in love with baking in the first place. I realised I didn’t want to chase trends or volume, I wanted to return to creating from the heart.
Now, Edible Essence is moving at a gentler pace, with a renewed focus on timeless elegance, natural beauty, and the kind of flavour that stirs nostalgia. My designs favour soft textures, real florals, and seasonal touches, always flavour-first and rooted in simplicity. My passion for cakes was inherited from two extraordinary women, my mum and my nan. They were both devoted bakers with an unwavering love of cake.
My mum continued baking right up until she fell poorly selling cakes at the Country Market and filling every tin in her kitchen with something sweet. She recently passed away, but every time I step into my kitchen, she’s with me. Her favourite was a classic coffee cake, I took inspiration from her recipe and created my own version, which now has a permanent place on my menu as a quiet tribute to her. My nan’s legacy lives on too, in my Hazelnut Praline cake, a flourless German recipe she passed down to me. It’s made with finely ground hazelnuts instead of flour, just as she did, and it’s rich with tradition and heart.
This is what sets Edible Essence apart, not just beautiful cakes, but cakes with soul. I work with quality, natural ingredients, celebrate buttercream in all its imperfect glory, and draw inspiration from the changing seasons, the people I love, and the stories behind the bakes. Whether you’re planning a wedding, marking a milestone, or simply want to indulge in something special, I create cakes that are made to be remembered.
