What is your signature cake?
I truly love Romance. So personal touches are something I do a lot of. Even discreet. Floral and pretty with contrasting colours I very much like. But then a classic white or cream dream cake makes my creative side excited too. I love details.
What is the most original creation you have baked for a wedding?
Very elegant venue, cake display table situated in front of a male statue. Five tiers of cake white iced with just a ribbon and a couple of flowers. The statue was very distracting because of its lack of clothing. Also the cake when cut was a full rainbow sponge all five tiers. This was one of my first wedding cakes. I will always remember this.
Describe how you got into making wedding cakes.
I was pushed by a client. They saw potential in me and had faith. I have not looked back since.
What would be your show stopper in the Great British Bake Off?
I actually made what I would of wanted to do. But I’m not sure they give you the time I would need to complete it. I made a seven tier cake hand made roses all different styles and sizes falling from the top to the bottom. This cake was then sitting on a fully working carousel with intricate horses and ornate decorations. Fully working lights and a motor that made just the carousel spin with the cake stationary. To finish it off it played beautiful organ music. This must be my favorite cake of all time so far.
