Actually, every wedding cake is memorable because I feel I have worked together with the bride & groom to produce something really special and unique to them, so each one is memorable for different reasons.

Get everything in place i.e., venue, colours, theme before designing your cake, and don't wait too long as good cake decorators get booked quickly.
One of my clients had a wood/outside theme and everything was wood inspired... it was brilliant.. from wishing sticks, logs on tables, the cake was a log with cup cakes, butterflies, mushrooms, etc.,
To hopefully engage them with my enthusiasm and excitement over their cake.
To provide cake samples from which I look forward to the OOOOO and Ahhhh's and 'that's yummy!'
To give an excellent design service, and I do feel it is up to me to guide and give ideas and alternatives to create their cake.

I make a delicious and so moist carrot cake and red velvet cake to die for.... but... I also make an amazing creamy fruit cake.. made with carnation cream which is just heavenly and moreish... but then my chocolate fudge cake is a popular choice... and so is my toffee cake...
The Acropolis cake, which was pretty much accurate, had 6 fruit cakes on the base and which took 2 of us to lift into the Hotel. Everything was made from sugar and I gather there was a queue to take pictures !!
A neighbour invited me to nightschool in the 80's.. and I never looked back.
Having entered I got to 80 out of 13,000 applicants. I was very pleased with my own recipe for a Thai Chicken Quiche, and a Belgium Chocolate Ganache Mousse Cake, which got me through and shortlisted in London.
