Actually a cake I made recently is probably my favourite and most memorable wedding cake. It was for a mature couple that love travel and literature - I made them an old fashioned leather suitcase with a stack of their favourite books on the top with a pair of old style passports and also then finished it with some handmade sugar flowers to match the brides bouquet. I loved decorating it, even though it took me hours and the couple were absolutely blown away by the finished cake, which makes it all worth while!

I am very proud that despite being diagnosed with breast cancer at the beginning of 2023, I managed to keep working throughout my chemotherapy and was able to fullfil all my weddings. My treatment is almost complete and I am pleased to say I am cancer now free, I am back to full capacity and looking forward to being able to fulfil more couples cake dreams!
Semi naked cakes are very popular and having fresh flowers on them to match your bridal bouquet and table centres can look stunning. However, when planning this, you need to be aware that many flowers and types of foliage are toxic and should not come in to contact with buttercream, where they may stick to the icing and could be consumed by your guests. I have a full list of flowers and foliage that are safe to use and usually liaise with your florist to ensure that similar flowers can be obtained where possible or can perhaps be substituted with some artificial ones. If you have any queries about your flowers pleased don't hesitate to ask, I'm always happy to advise.
I love it when couples include their pets in their weddings and I've had the pleasure of making sugar paste replicas of some gorgeous cats and dogs. Last year, I had to dress the couple's dog 'Dexter' up in a matching suit they'd had made for him which was super cute.

I have a signature chocolate cake, which is a deliciously moist and gooey cake made with buttermilk, and milk and dark chocolate melted in coffee to bring out the flavour of the chocolate. Because of the moisture content it has a really good shelf life as well allowing it to be enjoyed to 5 days or more (if you can resist eating all that is). I have several variations of this cake incorporating lots of fabulous flavours, from Baileys Irish Cream to chocolate orange, mint chocolate, chocolate caramel and my very popular 'Nuts About Chocolate' which includes peanut butter buttercream, homemade salted caramel and chunks of snickers!
Last year one of my brides said her favourite flavour was peach melba, so I made their middle tier (3 tier semi naked cake), a vanilla sponge and boiled up some peaches to make a peach sugar syrup which I soaked into the layers of sponge, then I layered it with a custard buttercream and pieces of poached peaches, some peach conserve, vanilla buttercream and raspberry jam. Luckily it was the right season to get some lovely quality fresh local peaches and she loved it and said their guests loved it too, which made it all worth while!
Peer pressure! LOL I started making cakes as a part-time passion and over the years so many people kept asking me to make cakes and telling me I should be doing it full-time that I eventually realised it was what I loved doing and I should make it my career. I LOVE making wedding cakes and like to make every cake I make as unique as the brides and grooms!
I love making tree and fairytale style cakes, so definitely something with a wood effect. Although, I confess that I spend so many hours creating my cakes, I'd have never done well on Bake Off with such a limited amount of time - I'm too much of a perfectionist!!
