Presentation of the herd: the herdsmen surround the herd and present the herd to the guests.
Garden games: horse games, dating from the time when the Popes resided in Avignon. Men would ride on horseback to Avignon and challenge each other to games of maneuverability to try to seduce a lady. These games allow guests to be shown the maneuverability and great skills of Camargue horses.
Camargue racing demonstration: young people from local bullfighting schools come to demonstrate what bulls are bred for. They must try to catch the cockade stretched between the animal's horns.
Ferrade: the herdsmen on horseback separate a one-year-old calf from the herd and take it at a gallop to the guests. He will be caught in order to be branded with the iron of the herd.

Gastronomy with the tastes of Provence:
Aperitif: Sangria accompanied by parsley mussels (mouclade), tapenade and croutons, chickpeas in tomato sauce, etc.
Starters: Seasonal salad and terrine, Anchovy, Provencal Buffet (anchovy, tapenade, eggplant and fried peppers in tomato sauce, melon, raw ham, brandade, etc.)
Main Course: Paella Royale, Fidéoa, Bull Gardiane, Bull in spicy sauce, Bull in beer, Bull on a spit (minimum 60 people), Grilled bull rib (around 300 gr). All these dishes are accompanied by Camargue rice.
